How's the weather (LOL)? It's snowing here right now, falling right on top of all the ice from last night's frigid temperatures. Not that today is any better, 13 degrees with wind chill taking it down to 3 - brrrr.

Chicken Adobo is so easy.

Ingredients:

1 package boneless, skinless chicken thighs (about 6 in a package)
1 cup soy sauce (we use Silver Swan, a Filipino brand which has less salt than regular brands you buy at the grocery store - if you don't have an Asian store in your area, look for a low sodium brand)
2 cups vinegar (again, a Filipino brand achieves the best results - we use Datu Puti which is a cane vinegar)
1 small onion, quartered
5-6 garlic cloves, peeled and smashed (just press the knife down on them until they are squashed)

Place all ingredients in covered saucepan and bring to the boil. Lower temperature to a gentle boil and place lid slightly tilted so that steam can escape. Cook about 35-45 minutes. Remove lid and with spoon, roughly break thighs into halves or quarters. They tend to plump up and you need to make sure they are cooked through. Continue to simmer for about 15 minutes more.

Remove chicken from pan and strain sauce to remove fat. If you're a garlic fan, the pieces of garlic are delicious to eat on their own!

Serve over white rice.

You can double or triple the ingredients as needed for a larger group. You can also substitute less expensive regular thighs (with bones and skin), but then you have all those bones and the skin to deal with when you serve it.

Both the Filipino soy sauce and vinegar can be ordered from an online Filipino grocery store such as www.filipino-store.com. I don't think the shipping is too costly.

I have been told that the whole thing can be placed in the crockpot and left to crock all day. I tried it once and found it made the chicken a little drier but still tasty.

Wow! I take that comment back about the shipping costs - one bottle of soy sauce and one bottle of vinegar (total purchase $4)costs $12 to ship! Yikes, I hope you have an Asian store near you.
